Instructions

- Whip sugar and eggs – In a stand mixer with the whip attachment, mix sugar and eggs on medium for 5 minutes until light and fluffy.
- Add oil and butter – With the mixer on low, slowly drizzle in the oil and melted butter. This should take about 1 minute.
- Add bananas, sour cream, and vanilla – Mix on low for another minute until well combined.

- Prepare loaf pan – Line a 9×5 loaf pan with parchment paper, leaving overhang on the sides. Butter the pan and the parchment.
